PESHAWAR: The landscape of Pakistan's northwestern Khyber Pakhtunkhwa province is defined by its harshness, a rugged expanse where jagged mountain peaks stand sharp against the sky. The people here are cut from the same stone as the landscape, hardy and rooted in a tradition of hospitality that dates back centuries.

In the heart of Takht-i-Bahi, near the city of Mardan, where the shadows of history loom large, there is a culinary tradition that exemplifies this hardy spirit: the legendary Takht-i-Bahi chappal kebab. The beef patty is a masterpiece of local cuisine that entices travelers from all over.

Usually, as the sun sets over the ruins of the ancient Buddhist site on a nearby mountain top, the aroma of sizzling meat cooked perfectly over an open wood fire fills the air. Locals, travelers, tourists, and truckers stop at numerous restaurants along the main Takht-i-Bahi-Mardan road for a taste of the delicacy.

The kebab is perfectly crispy on the outside, almost charred, with a dark brown crust that gives way to a tender, juicy interior.

The cooking process begins with the main ingredient: pure, high-quality ground beef.

Added to this is a proprietary blend of spices with a special local addition: a pinch of dried pomegranate seeds. But the true secret is the rich, savory bone marrow, which gives the kebab an almost primal flavor.

“People come from very far for these kebabs. From Malakand, Charsadda, Peshawar, Mardan, Nowshera, and all the areas up north, everyone comes here,” says Muhammad Sajjad, the manager and chef at a local restaurant famous for its kebabs and situated on the main road leading towards the Buddhist Ruins.

“A lot of people even come all the way from Punjab”, he adds.

“Chappal” is derived from "chaprikh," literally meaning flat, just like the shape of the kebabs. It is a dish designed for the weary and the bold, a hearty sustenance that warms the bones and satisfies the spirit.

'We always bring them here to try the kebabs'

When you sit at a rickety wooden table in Takht-i-Bahi, with trucks laden with sugarcane rumbling past, and watch the chef expertly press the spiced, marrow-enriched patty before lowering each kebab into bubbling tallow on a massive griddle, you are witnessing the region's culture and tradition come to life.

“The special thing about our kebabs is that we cook them over a wood fire, and secondly, we fry them all in pure tallow,” says the chef.

“I've been coming here a long time; I used to come with my father ever since I was a child; now I usually come here with friends”, says Sajjad Khan, a local resident. “Whenever we have someone visit, we always bring them here to try the kebabs.”

Many foreigners who come to visit the archaeological site in Takht-i-Bahi also stop to have a bite of the famous local food.

The smell of the woodsmoke, the heaviness of the tallow, the tart crunch of the dried pomegranate seeds, and the rich juices of the fried bone marrow in the kebabs give it a dense, savory taste. All of this makes this a heavy, satisfying meal built to sustain people through cold winter months.

As you finish your meal, watching the vibrant market life of the region continue around you, it becomes clear why this specific kebab holds such a revered place on the world’s culinary map. It is not just about the recipe — though the recipe is undeniably masterful — it is about the context of its creation.
